Nut-free granola bars

These homemade granola bars are a great alternative to store-bought options that often come with added sugars and preservatives. Packed with oats, dried fruit, pepitas, and a little honey, they make the perfect snack for kids with nut allergies.

1/2 cup desiccated coconut

2 1/3 cups quick oats

1/3 cup pepitas

3/4 teaspoon ground cinnamon

1/2 teaspoon sea salt

1/3 cup honey

1/4 cup coconut oil

2 tablespoons brown sugar

1 teaspoon pure vanilla extract

1/2 cup raisins or dried cranberries

1/4 cup mini chocolate chips, plus 2 tablespoons

Method
1
Line an 20cm x 20 cm tray with baking paper and spray with nonstick cooking spray.
2
Place the coconut in a small pan and cook over medium low heat, stirring occasionally, until light brown and toasted. Watch it closely so it doesn't burn.
3
In a large bowl, combine the coconut, oats, pepitas, cinnamon, and sea salt.
4
In a small pan, combine the honey, coconut oil, and brown sugar. Cook over medium heat until the coconut oil is melted, and the mixture starts to bubble. Remove from the heat and stir in the vanilla extract.
5
Pour the mixture over the dry ingredients and stir until the mixture is moistened. Let sit for about 5 minutes. Stir in the raisins or dried cranberries and 1/4 cup mini chocolate chips.
6
Transfer the mixture to the prepared tray. Use a spatula to evenly spread the mixture into the tray. Firmly press the mixture into the pan with your clean hands. You can dampen your fingertips or lightly spray them with cooking spray, so it isn’t too sticky. You really want to press the mixture firmly, so the bars stay together.
7
Sprinkle the remaining chocolate chips over the top of the bars and gently press them into the top of the bars.
8
Cover the tray and refrigerate for at least 2 hours. When the bars are completely chilled, use the parchment paper to lift the bars out of the pan. Cut into bars or squares and enjoy!
